Whole Wheat Bread

1 Loaf

Ingredients:
3 c whole wheat flour
1, 2 T honey
1 t salt
1T olive oil
1, 1/2 c warm water
1 tsp wheat gluten
1 T dough enhancer
1 T yeast

Directions:

Combine yeast, 1/2 c warm water, and 2 T honey. Cover and let sit for 10 minutes.  Combine flour, 1 T honey, salt, oil, wheat gluten, and dough enhancer.  Then add Yeast mixture and knead for 10 minutes by machine.  Shape into loaves.  Let rise for 1 hour.  Bake at 350 for 30 minutes.

3 Loaf Ingredients

9 c whole wheat flour
1/4, 1/4 c honey
1 T salt
1/4 c olive oil
3, 2/3 c warm water
1 T wheat gluten
3 T dough enhancer
3 T yeast

5 Loaf Ingredients

18 c whole wheat flour (12 unground)
1, 1/2 c honey
2 T salt
1/2 c olive oil
5, 1 c warm water
2 T wheat gluten
1/3 c dough enhancer

Pita Bread

Make whole wheat bread dough a little stiffer (use less water) and roll into round flat circles about 6 in in diameter.  Let rise on dishtowels 20-30 minutes.  Preheat oven to 500. Let oven reheat to 500 between each batch of pita.  Bake directly on rack for about 5 minutes.  Bread will slide off rack when slightly brown and will have a hollow pocket in the middle.

Scones

Take small pieces of dough and pull out into large circles or ovals until quite thin. Lay out on dishtowels, cover, and let rise about 30 minutes.  Heat olive oil in frying pan on medium high.  Cook scones until brown on both sides and cooked through
