Mangos and Sticky Rice


1 can of coconut milk 
2/3 cup uncooked short grain glutenous rice (same as I use for making sushi)
3/4 cup of sugar.

I soaked the rice in warm water for about ten minutes. I used enough water to submerge the rice. Then microwaved it for 3 minutes at a time for a total of 9 minutes, stirring in between. While soaking and microwaving, I put the coconut milk in a saucepan and very lightly simmered it. When hot enough I stirred in the sugar. Once the rice is done I poured half the sweetened coconut milk in and saved the other half for next time. I let the sweetened coconut milk absorb into the rice for about 15-20 minutes.
