Russian Borsch

Ingredients

1 diced onion
1 minced clove garlic
1 grated beet
2 grated potatoes
1 c grated carrots
1 grated turnip
1 shredded head of cabbage
3 cans vegetable broth
1 lg can whole tomatoes

Directions

Sir fry first 6 veggies in a little oil until tender.  Simmer in vegetable broth and canned tomatoes.  Stem cabbage and add to soup mixture.  Add water as needed to make soup consistency.  Simmer for 30 minutes, covered.  Serve with a small bit of sour cream in the middle of the soup.
