Banana Sour Cream Pancakes

Ingredients:

  • 1 1/2 cups flour
  • 3 T sugar
  • 2 tsp baking powder
  • 1 1/2 tsp salt
  • 1/2 cup sour cream
  • 3/4 cup + 1 T milk
  • 2 lg eggs
  • 1 tsp vanilla
  • 1 tsp grated lemon zest
  • butter
  • 2 bananas diced, plus extra for serving
  • Maple Syrup
Directions:  combine flour, baking powder, sugar, and salt.  In another bowl, whisk sour cream, milk, eggs, vanilla, and lemon zest.  Add wet to dry ingredients, mixing only until combined.  Melt 1 T butter on skillet.  Ladle batter into pan (1/4 cup).  Distribute rounded T of bananas onto each pancake.  Serve with sliced bananas, butter, and syrup.
