  • 1 cup oil
  • 1 cup brown sugar
  • 3 eggs
  • 3 cups of flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup sugar
  • 2 cups of grated, peeled zucchini
  • 3 tsp vanilla
  • 1 tsp baking powder
  • 1 tsp nutmeg
  • 3 tsp cinnamon
  • 1 cup chopped nuts
Beat eggs slightly, then add remaining ingredients (do not over-mix).  Bake at 325 for 1 hr.  Yields 2 loaves
The BEST Cinnabon Cinnamon Rolls




Ingredients:
  • 2 1/2 tsp yeast
  • 1/2 Cup water
  • 1/3 Cup + 1/2 tsp sugar
  • 1/ Cup warmed milk
  • 1/3 Cup butter
  • 1/2 tsp salt
  • 1 egg, slightly beaten
  • 3 1/2--4 Cup flour
Filling:
  • 1/4 +1/4 Cup melted butter
  • 3/4 +1/8 Cup sugar
  • 1 1/2 T cinnamon
Glaze:
  • 1/3 Cup melted butter
  • 2 Cup powdered sugar
  • 1 tsp vanilla
  • 4 T water, add more if needed

Instructions:


Combine yeast, water, and 1/2 tsp sugar.  Set aside.  

In bowl, mix milk, sugar, butter, salt and egg.  Add yeast mixture.  Add half of the flour and beat until smooth.  Stir in enough extra flour until slightly stiff (dough will be sticky).  

Knead 5--10 minutes.  Put in a bowl and let it rise 1--1 1/2 hrs.  Punch down, let it rest for 5 minutes. Roll into a 15 by 20 inch rectangle.  

Prepare the filling.  Spread 1/4 Cup melted butter on the dough.  Mix together sugar and cinnamon and sprinkle on.  Roll up the dough and then cut the rolls with floss. 

Coat the bottom of the pan with the other 1/4 Cup of melted butter and the 1/8 Cup sugar. Let the rolls rise until double.  

Cook at 350 F for 25--30 minutes.  Cool slightly and put the glaze on top.




Ingredients:
  • 1/2 Cup butter
  • 2/3 Cup sugar
  • 2 eggs
  • 1 Cup buttermilk (1 C milk + 1 T vinegar)
  • 1/2 tsp baking soda
  • 1 Cup cornmeal
  • 1 Cup flour
  • 1/2 tsp salt
Instructions:

Melt butter.  Add sugar and mix well.  Add 2 eggs and beat well.  Add buttermilk and baking soda.  Combine flour, cornmeal, and salt together, then add to wet mixture (do NOT over-mix it).  Bake in greased 8 inch square pan at 350 F for 30-35 minutes


Add to mixing bowl:

2 1/2 c. flour (we like half white, half whole wheat)
4 t baking powder
3/4 t salt
1 1/2 T sugar

Sift, then add:

2 eggs (beaten)
2 1/4 C milk
3/4 C olive oil

Mix lightly, but do not make completely smooth.


[Add blueberries or chocolates chips to batter.]

Add batter to a preheated waffle iron. Makes ~12 waffles.






Ingredients:

3 cups flour
2 t baking powder 
1/4 t baking soda
1 T sugar
1 t salt
1 t cream of tartar (if not, use an additional teaspoon of baking powder)
2/3 cup olive oil
1 cup milk (make it buttermilk, ideally)


Instructions:

Preheat oven to 450 degrees. Sift the dry ingredients together in one bowl. Mix wet ingredients in another bowl. Add wet to dry all at once; stir until moist. 

Knead for 8 strokes (do not over-knead!). Roll out on a floured surface with rolling pin (keep them fairly thick ~1/2 inch). Cut with a small cup or round cookie cutter. Bake for 11-13 minutes. Done when golden brown.

For a more uniform shape, you may choose to roll out the dough and use a cookie cutter.
Remember that biscuits are best if you handle the dough as little as possible.
