Pumpkin Cake Roll

Ingredients

3 eggs, beat 5 minutes
1 c sugar
2/3 c pumpkin
1 tsp  lemon juice
3/4 c flour
1 tsp baking powder
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt

Directions

Mix all ingredients until light and foamy.  Put waxed paper on greased jelly roll pan.  Spread mixtures on pan evenly.  Bake at 350 15-20 minutes.  While hot. roll up in huck dish towel.   Sprinkle with powdered sugar.  Chill 2 hours, make cream filling:

1 c powdered sugar
6 oz cream cheese
1 T butter
1/2 tsp milk

Beat until smooth.  Unroll cake and spread with cream mix.  Re-roll and chill.  Cut in slices like bread.
