Meatballs

Ingredients:

2 lbs ground beef
1 lb ground pork (or mild Italian sausage)
1 c soft bread crumbs (about 4 slices)
1 T oregano leaves
3 T grated parmesan cheese
2-3 minced garlic cloves
1 tsp salt
Olive oil

Directions:

Mix ground beef and pork together.  Add remaining ingredients and mix well.  Shape into round meatballs, about 1 T per meatball.  Lightly brown in olive oil--DO NOT OVERCOOK.  Add to sauce and simmer for about 1/2-1 hr.  Add several T of olive oil with brownings from pan for flavor.  Serves 15
